Why butter works

The heat in chillies comes from capsaicin, which dissolves in fat. When a slab of Amul butter melts into hot Tari, the fat carries the heat more gently across your tongue. The spice is still there, but softer and rounder.

Why cheese works

Grated Amul cheese melts into the hot usal and coats the sev. It makes the bowl creamy and milder, which is why Cheese Sev Usal is a favourite with children.
